Jerusalem artichokes reaching for the sky - once you have Jerusalem artichokes in your garden, you'll always have them! If you plant a Jerusalem artichoke tuber, make sure it's in a contained area otherwise they will spread. The plants are in the sunflower family and have small yellow daisy-like flowers. Use the tubers like you would use potatoes.
